Stuffed Meatloaf with Frittata and Spinach

A classic Italian stuffed meatloaf filled with a fluffy frittata, boiled spinach, and stretchy provola cheese, baked to perfection.

Ingredients
8 items- 500 gMixed Ground Meat
- Breadcrumbsa handful
- 1 pcsEggfor the meat mixture
- 250 gSpinach
- 150 gPan di Provola
- Saltto taste
- Pepperto taste
- Cheeseto taste, a generous amount
Method
- In a bowl, combine the minced meat, breadcrumbs, egg, salt, pepper, and a generous amount of cheese. Mix well.
- In a separate bowl, beat the 4 eggs and cook a thin frittata in a non-stick pan.
- Boil the spinach and drain well.
- Place a sheet of parchment paper on the counter, spread the meat mixture onto it, flatten into a rectangle about 1 cm thick.
- Layer the frittata over the meat, then the spinach, and finally the slices of provola cheese.
- Using the parchment paper, carefully roll the meatloaf into a log, sealing the ends.
- Wrap the meatloaf completely in the parchment paper, twisting the ends like a candy wrapper.
- Bake at 180°C for 30 minutes. Then remove the top layer of paper and bake for another 10 minutes to dry the surface.
- Let it rest for a few minutes, then slice and serve.
