Casalino tomatoes halved, hollowed out, seasoned with garlic, herbs, and a pinch of sugar, then baked until slightly charred and caramelized. A classic Roman summer snack, perfect on its own or as a side.

Ingredients
8 items- Pomodori CasalinoUse ripe summer tomatoes; San Marzano can substitute
- Garlic1–2 cloves, chopped
- BasilFresh leaves, to taste
- Dried OreganoDried oregano, to taste
- SugarA pinch
- SaltTo taste
- PepperTo taste
- Olive OilExtra virgin olive oil, generous amount
Method
- Cut the Casalino tomatoes in half.
- Using a small spoon, remove the seeds and some of the pulp.
- Salt the tomatoes and toss them to release liquid. Let them rest for 20 minutes.
- Arrange the tomato halves in a baking dish.
- Season with chopped garlic, fresh basil, dried oregano, a pinch of sugar, salt, pepper, and a generous amount of olive oil.
- Bake in a static oven at 190°C (375°F) for 20 minutes, until they are almost charred.
- Optionally, remove the dried basil and add fresh basil before serving.
