Ingredients

- Chili Peppera pinch
- Black Peppera pinch
- Junipera tiny bit, crushed
- Nutmega pinch
- Cannella in Stecchea pinch of ground cinnamon stick

- Extra Virgin Olive Oila small amount for coating
- Coarse Salta pinch of coarse salt
Method
- Chop the parsley, sage, lemon zest, and thyme very finely.
- In a bowl, mix breadcrumbs with chili, pepper, juniper, nutmeg, cinnamon, and a pinch of coarse salt.
- Wet each pork steak with a splash of white wine, then with a splash of extra virgin olive oil, using your fingers.
- Press the pork steaks into the seasoned breadcrumbs, making sure the coating adheres well on all sides, including the bone.
- Prepare the embers: spread the coals, lower the flame, and allow the embers to become calm (about 5 minutes). Place the grill over the embers.
- Place the breaded pork steaks on the grill, close the lid, and cook for 5-6 minutes per side, flipping once, until golden and cooked through.
- Serve immediately.
