A quick and easy version of Roman puntarelle dressed with a ready-made anchovy mayonnaise sauce, extra-virgin olive oil, chili, and a pinch of salt. Tossed by hand for a crunchy winter salad.

- 1 tbspSalsa di Acciughe Pronta (Maionese di Acciughe)Ready-made anchovy mayonnaise sauce
- Extra Virgin Olive OilA drizzle
- Dried Chili PepperA pinch
- SaltA pinch
- IceFor the ice water bath
- Lemon Juice(optional) — Optional, to prevent oxidation if prepared a day ahead
Method
- Clean the puntarelle as described in the classic recipe: remove outer leaves, cut the stem at the hollow point, peel or not, and soak in ice water with a squeeze of lemon until curled. Drain well.
- In a bowl, combine 1 tablespoon of ready-made anchovy mayonnaise sauce with a drizzle of extra-virgin olive oil, a pinch of dried chili, and a pinch of salt.
- Add the drained puntarelle and toss gently with your hands until the dressing coats the vegetable. Serve immediately.
