Sciusceddu is a traditional Sicilian dish from Messina. It consists of fried meatballs, a ricotta and egg mixture, and broth, all baked in the oven. A rustic and comforting dish, perfect for holidays.

Method

  1. Prepare the meatball mixture: mix ground meat, chopped parsley, parmesan, oil, breadcrumbs, salt, and pepper. If too dry, add a little broth. Let rest for 20 minutes.
  2. Shape meatballs of 15 g each.
  3. Fry the meatballs in oil at 160-170°C until golden.
  4. For the ricotta mixture: soften the ricotta, add parmesan, two egg yolks, salt, and pepper. Mix well.
  5. Whip the egg whites to stiff peaks and gently fold into the ricotta mixture.
  6. Distribute the meatballs in cocotte dishes. Add broth to the level of the meatballs. Top with the ricotta mixture and sprinkle with parmesan.
  7. Bake in a static oven at 200°C for 15 minutes, then grill until golden.
  8. Serve hot.
