Spaghetti with Garlic, Oil, Chilli and Baby Squid

Chef Max Mariola transforms four tiny baby squid into a memorable spaghetti aglio olio e peperoncino. Using colatura di alici for a seafood kick and crushed taralli for crunch, this quick recipe turns a handful of ingredients into an incredible pasta dish.

Ingredients
8 items- SpaghettiUse number 3 spaghetti, preferably Liguori brand with Italian grain
- 3 pcsGarlic
- Extra Virgin Olive OilUse a good quality extra virgin olive oil, such as D'Agostino
- ParsleyBoth leaves and stems used; separate stems for infusing oil
- Chili PepperA pinch; adjust to taste
- 4 pcsCalamarettiVery small baby squid
- 5 pcsTaralliCrushed for crunch; can substitute with breadcrumbs
- 1 tbspColatura di AliciAnchovy sauce; add off heat. Recommended brands: Acquapazza di Cetara or Delfino.
Method
- Thinly slice the garlic cloves.
- In a large pan, heat a generous amount of extra virgin olive oil. Add the sliced garlic and parsley stems. Sauté gently until the garlic is golden.
- Meanwhile, cook the spaghetti in boiling salted water until al dente (about 8 minutes).
- Once the garlic is golden, remove the garlic slices and parsley stems from the oil.
- Add the fresh parsley leaves to the oil and fry for a few seconds. Add a splash of pasta cooking water to stop the cooking.
- Add a pinch of chilli pepper (adjust to taste).
- Drain the spaghetti al dente and transfer it to the pan with the sauce. Add more pasta water as needed and toss to combine, letting the pasta finish cooking in the pan.
- Thinly slice the baby squid into rings and add them to the pan. Cook for 1-2 minutes until just cooked.
- Crush the taralli (or use breadcrumbs) and add them to the pan. Toss well.
- Turn off the heat. Add about one tablespoon of colatura di alici (anchovy sauce) and toss again.
- Garnish with fresh parsley, a final drizzle of extra virgin olive oil, and serve immediately.
