Preparation of spaghetti all'Assassina, a dish of spaghetti cooked in a tomato broth until crispy and charred.

Ingredients
8 items- Waterfor the tomato broth
- Tomato Passatafor the broth and for the pan
- 1 tbspTomato Paste
- Garliccrushed
- Chili Pepperfresh or dried, to taste
- Extra Virgin Olive Oilfor cooking and finishing
- Spaghettidry, quantity to taste
- Saltto taste
Method
- Prepare a tomato broth by mixing water and tomato passata in a pot; add a tablespoon of double concentrated tomato paste and bring to a boil.
- In a pan, heat a drizzle of extra virgin olive oil, add crushed garlic and chili pepper, and sauté.
- Add some tomato passata to the pan and let it come to a simmer.
- Add the dry spaghetti directly into the pan, stirring gently to avoid breaking them.
- Gradually add the hot tomato broth one ladle at a time, keeping the heat high.
- Occasionally stir the spaghetti gently.
- Season with salt gradually.
- Continue adding broth and cooking until the spaghetti are almost done.
- When nearly cooked, stop stirring and let the spaghetti cook on high heat so the bottom becomes crunchy and charred.
- Finally, drizzle with a thread of olive oil, let it crisp up, and serve immediately.
