Spaghetti with Mantis Shrimp

A simple but flavorful Roman-style spaghetti with mantis shrimp, fresh tomatoes, garlic, chili, and white wine. Quick and delicious!

- Bring a large pot of salted water to a boil for the pasta.
- Clean the mantis shrimp by cutting them into pieces (head, body, tail).
- In a large skillet, heat a generous drizzle of olive oil over medium heat. Add the garlic cloves and a pinch of chili pepper.
- Add the mantis shrimp pieces and let them sear for 1-2 minutes.
- Pour in a splash of white wine and let it evaporate completely.
- Remove the garlic cloves if desired.
- Add the torpedino tomatoes (cut in half or quarters) to the skillet and cook for a couple of minutes, stirring.
- Cook the spaghetti to al dente (about 1 minute less than package instructions).
- Reserve some pasta water, then drain the spaghetti and transfer them to the skillet with the sauce.
- Toss everything together, adding a little pasta water if needed to emulsify. Add chopped fresh parsley.
- Serve immediately with a drizzle of extra virgin olive oil and a pinch of chili or black pepper if desired.
