Spaghetti with Lupini

A simple yet flavorful pasta dish from Manu Food, featuring lupini beans cooked with garlic, white wine, and cherry tomatoes, then tossed with spaghetti and fresh parsley.

Ingredients
9 items- Garlic1 clove, crushed
- Extra Virgin Olive Oilfor cooking and finishing
- Lupinifresh or precooked lupin beans (as used by the chef)
- White Winea splash
- Cherry Tomatoescherry tomatoes, quartered
- Pasta Cooking Waterstarchy pasta water, as needed
- Spaghettiquantity to taste
- Parsleyfresh, chopped
- Chili Pepper(optional) — to taste (optional)
Method
- Sauté a crushed garlic clove in extra virgin olive oil.
- Remove the garlic once golden.
- Add the lupini beans to the hot oil and cover to prevent splatters.
- Deglaze with a splash of white wine and let the alcohol evaporate.
- Add quartered cherry tomatoes and a ladle of pasta cooking water.
- Cover and cook until the lupini beans open.
- Remove the opened lupini from the pan and set them aside, keeping the sauce in the pan.
- Shell the lupini beans one by one, reserving a few for garnish.
- Return the shelled lupini and the reserved tomatoes to the sauce in the pan.
- Add a little more pasta cooking water, cover, and simmer gently until the tomatoes soften.
- Crush the tomatoes with a fork to release their juice.
- Cook the spaghetti al dente, then drain, reserving some cooking water.
- Add the spaghetti to the sauce in the pan.
- Toss over high heat, adding pasta water as needed to emulsify.
- Add chopped parsley and, if desired, chili pepper.
- Toss and stir to combine.
- Drizzle with raw extra virgin olive oil and give a final toss.
- Plate the spaghetti, top with the sauce, and garnish with reserved lupini and a parsley leaf.
