Spaghetti with Squid and Broccoli Rabe

A classic Roman pasta dish combining tender squid and slightly bitter broccoli rabe, sautéed with garlic, chili, and white wine, finished with pecorino romano.

Method
- Clean the broccoli rabe: remove the tough stems, make a cross in the thicker ones.
- Clean the squid: remove the head, internal cartilage, ink sac, beak and eyes; rinse well.
- Bring a large pot of salted water to a boil.
- Blanch the broccoli rabe in the boiling water for a few minutes, then remove with a slotted spoon and set aside.
- In the same water, cook the spaghetti until al dente.
- Meanwhile, in a large pan, heat olive oil and add whole garlic cloves and a dried chili pepper; let them flavor the oil.
- Add the cleaned squid to the pan and cook for about 2-3 minutes. Deglaze with a splash of white wine.
- Add the blanched broccoli rabe to the pan and toss to combine.
- When pasta is al dente, transfer it directly to the pan with a small amount of pasta cooking water.
- Stir vigorously over low heat to emulsify the sauce. Remove from heat.
- Sprinkle with grated Pecorino Romano and serve immediately.
