Spaghetti with Clams and Squid

A festive Italian seafood pasta with clams, squid, and bottarga, perfect for Christmas Eve.

Ingredients
10 items- Calamaretti spilloSmall spillo squid, very flavorful
- Spaghetti DoppiThick double spaghetti
- Chili PepperRed chili pepper, to taste
- BottargaDried mullet roe, about 100g commercial grade
- GarlicGarlic cloves, one for the clams and grated for the second pan
- Parsley(optional) — Fresh parsley, to taste, optional for garnish
- Veraci ClamsFarm-raised clams, already purged
- Olive OilExtra virgin olive oil, abundant
- SaltFor pasta water
- WaterFor cooking clams and pasta
Method
- Clean the 'spillo' squid by removing eyes and internal quill, then rinse.
- Clean the clams by tapping each one; discard any that are full of sand.
- Rinse the clams under water.
- In a pan, heat olive oil and a clove of garlic. Add a little water, then add the clams. Cover and cook until they open. Remove opened clams and set aside. Strain the cooking liquid.
- In another pan, heat olive oil and grated garlic. Add chili pepper and cook gently.
- Add the cleaned squid and cook briefly.
- Cook the spaghetti in salted boiling water until al dente, reserving some pasta water.
- Add some of the strained clam liquid to the squid pan. Add the drained spaghetti and toss.
- Grate bottarga over the pasta and toss again. Add the reserved clams and mix.
- Serve with fresh parsley (optional) and an extra grating of bottarga.
