Ingredients
13 items- Vitello da Latte (Muscolo)About 100-150g per person, ask your butcher for muscle cut
- Clarified ButterFor browning and sautéing
- Ramata OnionOne medium onion, sliced
- CarrotOne carrot, cut into chunks
- Celery(optional) — Optional, one stalk cut into chunks
- Garlic2 cloves, grated
- BeerAbout 200 ml, preferably a dark beer like Noel (caramel, chocolate notes)
- Sweet PotatoOne per person, cut into large chunks
- Patata GiallaOne per person, cut into large chunks
- Treviso Radicchio IGPOne head, separate white stalk and red leaves; stalk added earlier, red leaves added at the end
- SaltTo taste, added after browning
- PepperTo taste
- Vegetable Broth Or WaterEnough to almost cover the ingredients
Method
- Heat clarified butter in a heavy pot (cast iron or thick steel) over medium heat.
- Add the veal muscle pieces and brown them well on all sides. Do not add salt at this stage.
- Remove the meat and set aside. In the same pot, add onion, carrot, and optional celery cut into coarse pieces, plus grated garlic. Sauté until fragrant.
- Deglaze with beer, scraping up any browned bits from the bottom of the pot.
- Return the meat to the pot. Season with salt and pepper.
- Add both the sweet potato and yellow potato, cut into large chunks.
- Add the white part (stalk) of the radicchio di Treviso, reserving the red leaves for later.
- Add enough broth or water to almost cover the ingredients.
- Cover with the lid slightly ajar and simmer gently for about 60 minutes, or until the meat is tender.
- In the last 5 minutes of cooking, add the red radicchio leaves and stir through.
- Serve hot, optionally with a glass of the same beer used for cooking.
