Ingredients
13 items- 650 gCappello del Pretearound 600-700g
- Flourfor dusting, as needed
- Extra Virgin Olive Oilas needed
- Celeryas needed (chopped)
- Onionas needed (chopped)
- Carrotas needed (chopped)
- 1 tbspTomato Paste1 tablespoon
- 200 mlRed Wine1 glass (about 200ml)
- Meat Brothas needed (can substitute vegetable broth)
- Aromatic Herbsmixture of herbs such as rosemary, bay leaf, thyme
- 300 gPeasfresh or frozen
- Saltto taste
- Black Pepperto taste
Method
- Cut the meat into cubes of uniform size.
- Lightly flour the meat cubes.
- Heat olive oil in a pan over medium heat.
- Brown the meat on all sides until a golden crust forms.
- Remove the meat from the pan and set aside.
- In the same pan, sauté the chopped celery, onion, and carrot until softened.
- Return the meat to the pan.
- Add a tablespoon of tomato paste and stir well.
- Deglaze with a glass of red wine, letting it evaporate completely.
- Add warm beef broth (or vegetable broth) until the meat is covered. Season with salt.
- Add aromatic herbs (such as rosemary, bay leaf, thyme) and bring to a gentle simmer.
- Lower the heat and let it cook slowly for about 3 hours, checking occasionally and adding more broth if needed.
- After about 2.5 hours, add 300 g of peas (fresh or frozen) and continue cooking for the last 30 minutes.
- Season with black pepper. Increase the heat slightly in the last few minutes to let the sauce thicken.
- Serve hot with crusty bread for dipping.
