Juicy beef skewers made from the tail end of the fillet, marinated with soy sauce, chili, lemon, and herbs, grilled to perfection with a honey glaze. A clever and economical way to enjoy a premium cut.

Method

  1. Trim the external fat from the fillet tail, removing only the dry outer fat that won't dissolve during cooking.
  2. Cut the meat into plump pieces of roughly equal size.
  3. Prepare the marinade: combine soy sauce, chopped green and red chili peppers, lemon juice, pink peppercorns, a drizzle of oil, sliced onion, crushed garlic, and chopped parsley.
  4. Add the meat pieces to the marinade, mix well, and let marinate for a few minutes.
  5. Thread the meat onto two parallel skewers (Japanese-style) to prevent twisting.
  6. Grill the skewers over hot coals or a grill until nicely browned and cooked to your liking, turning occasionally.
  7. While the skewers are grilling, pour any leftover marinade into a small pan, add a spoonful of honey, and reduce over heat until it thickens into a glaze.
  8. Brush the glaze over the cooked skewers or serve it on the side.
