Ingredients

- Potatoessliced thinly
- Lemona few slices
- Parsleyfresh, a sprig
- Saltto taste
- Pepper(optional) — optional, to taste
- Cherry Tomatoescherry tomatoes, any color
- Pitted Olivespitted olives
- Capersdesalted capers
- Olive Oilextra virgin olive oil, to drizzle
- White Wine(optional) — half a glass, or substitute with water
Method
- Clean the sea bass: scale it, remove the fins, gut it, remove the gills, and wash under running water.
- Slice the potatoes thinly (using a mandoline if available).
- Lightly wet some parchment paper and line the baking dish.
- Arrange the potato slices in a bed, not overlapping too much.
- Place the cleaned sea bass next to the potatoes.
- Season the inside of the fish with salt, a few lemon slices, pepper (optional), and a sprig of parsley.
- Season the potatoes with salt.
- Cut some cherry tomatoes (any color) and add them to the dish.
- Add pitted olives and desalted capers.
- Drizzle with olive oil.
- Pour half a glass of white wine over the potatoes (or water as a substitute).
- Bake at 180°C for about 20 minutes.
