A rich, slow-cooked Neapolitan pork rib sauce, simmered with onions and tomato passata, then blended into a velvety, meaty ragù perfect for coating short pasta like ziti. Finished with Parmigiano Reggiano.

Method

  1. Cut the pork ribs into pieces.
  2. Finely chop two large yellow onions.
  3. In a pot, heat a generous amount of extra virgin olive oil.
  4. Add the chopped onions and brown them.
  5. Add the rib pieces to the pot, season with salt and pepper, and let them brown for about 20 minutes, stirring occasionally.
  6. Pour in enough tomato passata to cover the meat, cover the pot, and simmer for 1 hour.
  7. Remove the meat from the pot and let it cool slightly. Discard the bones and mash the meat with your hands until it resembles a coarse paste.
  8. Return the mashed meat to the tomato sauce and stir well.
  9. Bring a large pot of salted water to a boil. Break the ziti pasta by hand into shorter pieces and cook until al dente.
  10. Drain the pasta and add it directly to the rib sauce. Toss well so the pasta is fully coated.
  11. Serve the pasta with plenty of sauce, and finish with grated Parmigiano Reggiano.
