A grilled ribeye steak (tagliata) served with a quick sauce of crispy guanciale, caramelized red onion, fresh tomatoes, red chili, and Pecorino Romano, inspired by the flavors of amatriciana.

Ingredients
11 items- Guancialesliced thick (about 2 slices)
- Costata di Manzoribeye steak
- 1 pcsRed Onionwhole, chopped coarsely
- Fresh Tomatoescut into pieces
- Olive Oildrizzle
- White Winea splash
- Chili Pepperto taste
- Coarse Saltcoarse salt, to taste
- Black Pepperto taste
- Pecorino Romanograted, to taste
- Maldon Saltsalt flakes, for finishing
Method
- Light the barbecue or grill.
- Slice the guanciale into thick slices (about 2 slices).
- Place the guanciale slices on the grill and cook until crispy.
- Chop the red onion into coarse pieces.
- In a pan or on a barbecue burner, heat a drizzle of olive oil and add the onion; sauté over medium heat.
- Meanwhile, place the beef ribeye steak on the grill and cook for 5 minutes per side over high heat; then stand it on its bone to heat the interior.
- When the onion is wilted, deglaze with a splash of white wine and let it evaporate.
- Add the fresh tomatoes cut into pieces; stir and cook for a few minutes.
- Season the sauce with coarse salt, chili pepper to taste, and black pepper.
- Add the crispy guanciale slices to the pan and stir.
- Remove the steak from the grill and let it rest on a cutting board for a few minutes.
- Slice the meat thinly against the grain.
- Arrange the sliced meat on a plate.
- Pour the guanciale and tomato sauce over the meat.
- Grate abundant Pecorino Romano over the tagliata.
- Finish with a sprinkle of Maldon salt flakes for crunch.
- Serve immediately.
