Beef Tartare with Elderflower, Melon and Raspberries

A refreshing summer cold dish: beef tartare seasoned with a dressing of red wine vinegar, elderflower syrup and bay leaf, served with a melon-elderflower sauce, grated almonds, nutmeg and garnished with raspberries and mint.

Method

  1. Prepare the dressing: In a small pan, combine a splash of red wine vinegar, elderflower syrup (elisir di sambuco), finely chopped shallot, a bay leaf, a drizzle of extra virgin olive oil, salt, and pepper. Heat gently for a few minutes, then let cool.
  2. Prepare the beef: Take a piece of beef fillet that has been briefly chilled in the freezer. Slice it into thick slices, then remove any sinew and fat. Dice the meat into very small cubes.
  3. Season the beef: Sprinkle with fleur de sel and a little pepper. Add the cooled dressing and a drizzle of extra virgin olive oil. Mix gently with a fork.
  4. Shape the tartare: Place a ring mold on a plate. Fill with the seasoned beef and press firmly to compact. Refrigerate for at least 30 minutes to set.
  5. Prepare the melon sauce: In a blender, combine a slice of melon (peeled and seeded), a splash of elderflower syrup, and two mint leaves. Blend until smooth.
  6. To serve: Remove the ring mold from the tartare. Grate fresh almonds and a little nutmeg over the top. Spoon the melon sauce around the tartare. Garnish with fresh raspberries, mint leaves, and optionally a few drops of squid ink for contrast.
