Fresh Tuna Tartare

A quick and flavorful fresh tuna tartare recipe from Chef Max Mariola. Small cubes of tuna are tossed in a sauce made with soy sauce, fresh mint, lemon, and chili, then mixed with finely diced red onion. The tuna is frozen beforehand for safety.

Ingredients

- Fresh Chili Pepperto taste, finely chopped
- Extra Virgin Olive Oila drizzle
- Red Onionfinely diced
- Saltto taste
- Black Pepperto taste
Method
- Freeze the fresh tuna fillet at -18°C for at least 4 days to eliminate any parasites.
- Dice the frozen-thawed tuna into small cubes (about 5 mm).
- For the sauce: chop fresh mint leaves and fresh chili pepper finely. Juice one lemon.
- In a bowl, mix the soy sauce, lemon juice, chopped mint, and chopped chili. Add a drizzle of extra virgin olive oil and mix well.
- Add the diced tuna to the sauce and toss gently to coat. Season with salt and black pepper to taste.
- Finely dice the red onion and add it to the tartare. Mix gently.
- Serve the tartare cold, optionally garnished with additional mint leaves and a drizzle of olive oil.
