A classic Italian apple cake, soft and fragrant, perfect for breakfast or a snack. Made with fresh apples and simple ingredients, it’s an easy and delicious dessert.

Method

  1. Peel the apples. Cut half into small dice and the other half into slices. Toss the dice and slices with a spoonful of sugar and lemon juice to prevent browning.
  2. In a stand mixer or with electric beaters, beat the eggs (at room temperature) until frothy. Gradually add the sugar and continue beating until light and fluffy.
  3. Add the milk or yogurt (at room temperature) little by little, mixing gently on low speed.
  4. In a separate bowl, sift together the flour, potato starch, baking powder, cinnamon and vanilla aroma.
  5. Gradually add the sifted dry ingredients to the egg mixture, folding gently from bottom to top until just combined.
  6. Melt the butter and add it to the batter along with the orange aroma (or grated orange zest). Mix gently.
  7. Fold in the diced apples.
  8. Butter and flour a 26 cm cake pan (or use baking spray). Pour the batter into the pan, level the surface and decorate with the apple slices.
  9. Bake in a preheated oven until golden and a skewer inserted in the centre comes out clean. (The chef does not specify temperature or time, but a typical range is 170-180°C for 40-50 minutes.)
  10. Let the cake cool in the pan for a few minutes, then remove from the pan and let cool completely on a wire rack. Brush the surface with apricot jam (or a jam of your choice) dissolved with a little water for a shiny finish.
