A quick and comforting midnight snack: eggs simmered in a simple tomato sauce with onion and butter, served with bread for dipping.

Ingredients
6 items- Butter
- 1/2 pcsOnion
- Peeled TomatoesCanned peeled tomatoes; use about half a standard 400g can
- Black PepperTo taste
- Coarse SaltA pinch
- 2 pcsEgg
Method
- Finely chop the onion.
- Melt the butter in a pan.
- Add the chopped onion and let it soften gently without browning.
- Add the crushed canned tomatoes, a pinch of coarse salt, and black pepper. Mash the tomatoes with a fork.
- Cook for about 2–3 minutes until the tomato sauce begins to bubble.
- Meanwhile, separate the egg whites from the yolks.
- Pour the whites into the pan and let them cook for a few seconds until they begin to set.
- Place the yolks on top of the whites, add a small knob of butter on each yolk, and season with pepper.
- Cook for about 10 seconds, then turn off the heat.
- Serve immediately with bread to dip into the eggs and sauce.
