Ingredients
11 items- 500 mlMilk
- 1 pcsVanilla Bean
- Lemon ZestOnly the yellow part
- 4 pcsEgg Yolks
- 40 gCornstarchCornstarch
- 250 mlWater
- 80 gButter
- SaltA pinch
- 150 gFlour
- 3 pcsEggOne at a time
- Frying OilEnough for deep frying, heated to 180°C
Method
- Prepare the lemon cream: heat milk in a pot with a vanilla bean.
- Add lemon zest (only the yellow part) and egg yolks.
- Add cornstarch and stir well.
- Pour the mixture back into the pot and cook until thickened, stirring constantly.
- Let the cream cool, covering with plastic wrap directly on the surface.
- For the zeppole: bring water, butter, and a pinch of salt to a boil.
- Add flour and cook for a minute until a film forms on the bottom of the pan.
- Transfer the dough to a bowl and add eggs one at a time, mixing well after each.
- Fry the zeppole in oil at 180°C, gently pressing them to help them puff up.
- Fill the fried zeppole with the lemon cream using a star-tipped piping bag.
- Serve and enjoy.
