This is the Bacon Bacon. The bacon is not crunchy as written on the board, but it's soft and flavorful — I actually prefer it this way because it stays juicy and tasty. The beef patty is perfectly cooked, well-done but still amazing, you can tell it's high quality. The bread is beautiful. The only flaw is the bacon is a bit greasy, but overall this is a solid 9 out of 10.

Inside there's beef patty, amatriciana sauce, guanciale from Norcia cut by hand — you can tell it's hand-cut because it's so thin and perfect. The guanciale is crunchy and you can really taste it's from Norcia, totally different from the bacon. The sauce has a slight acidity that works perfectly. The beef is cooked a bit less than the first one, but I actually prefer the first one's cooking. Still, this is one of the best sandwiches I've ever eaten.
