“This is one of the most unique sandwiches I've ever seen. The man invented his own recipe: he starts with nine different roasted vegetables pureed into a sauce, then adds a special cheese from the Black Sea region, slabs of butter, and lets it melt slowly. Then he puts köfte patties onto the hot griddle, and the cheese becomes a stretchy, melted pile mixed with the butter and roasted vegetable sauce. The köfte patties get encapsulated in the cheese like a spiderweb. It's served in a soft, crusty bread with chili flakes and oregano. The cheese is not overpowering — it's neutral and not greasy. The roasted vegetables embedded in the melted cheese add so many flavors. The oregano brightens it up. It's like a Turkish meatball sub but the greatest meatball sub you'll ever have. Absolutely amazing.”
