Our paella is finally here — a huge plate for four people, and it smells just incredible. It has caramelized rice, snails, green beans, broad beans, chicken meat, rabbit meat, and some lemon to squeeze on top. This is a proper, original Valencian paella — everything else was invented afterwards, but this is where it all started. The meat is nice and tender, the rice is perfect. The green bean and broad bean just melt in your mouth. I think I had a rabbit's kidney — very nice taste again. The combination of ingredients is something you can't beat, and being cooked on those really strong flames creates something special with each paella. I tried one of the snails for the first time — it's nice, a bit salty, a bit chewy, has that snail texture, but it's good. A perfect lunch and a perfect paella.
