We go to Livorno. Cacciucco — some fish seared, others left raw, a mix of sauces, mayonnaise and the cacciucco sauce. The emulsified sauces give a nice richness on the palate that mixes with the freshness of the net and raw crustaceans. This is my favorite dish of the dinner.
