The story
In a city known for refined dining, Mollica stakes a compelling claim for Torino’s best street food. This Piazza Madama Cristina sandwich shop prioritizes small producers and house-made focaccia. Franchino Er Criminale calls their panini “generous, well-balanced, and delicious,” while Habemus Fame praises the “homemade bread and focaccia with top-quality fillings.” The result is an ingredient-driven experience that has earned a loyal following.
The menu rotates, but the Piemontesina remains a standout—Restory Food describes it as a “delicious and generous combo” of porchetta, toma cheese, pumpkin chips, and tonnata sauce, a sandwich recognized by Gambero Rosso. Whether ordering the seasonal Panino del Mese or another carefully composed option, Mollica delivers consistently excellent, well-balanced sandwiches that elevate the city’s street-food scene.

Reviewers rave about Mollica’s Panino del mese, a masterful sandwich from Franchino Er Criminal, calling it the star of a warm, unpretentious menu that feels like a love letter to Roman street food.
“I got the panino of the month with bread, and I paid €8 for it — which is an honest price for the massive thing I have in my hand. The ingredients are: artisan cooked ham, Toma cheese from Marco and Sabrina, pumpkin chips, red cabbage, and a 'zuccona' sauce made from pumpkin, peanuts, and curry. The bread looks great, it's super puffy. The bread is good, you can tell it's fresh and high quality. The ingredients inside are quality and well-chosen, you can taste every combination. The sauce is very soft, which is good because you can taste the quality of the cooked ham and the Toma. But personally, I would have preferred a sauce with a bit more character. Perfect sandwich. They're really good. I hope they keep it up and don't change anything, including the amount of filling — because it really rocks.”

An excellent gourmet sandwich shop with top-quality ingredients and a fantastic focaccia. Highly recommended.

Il Vaccaro
I got the Vaccaro: artisanal soppressata, Novara gorgonzola, caramelized onion, lettuce, mustard and honey on a Piemontesina focaccia (with potatoes and walnuts in the dough). The focaccia is oily and stays crunchy, good. The soppressata looks great, the gorgonzola really pushes through, the caramelized onions, mustard, honey — it's all perfect. I'd remove the lettuce, but it's an excellent sandwich, big and full of good ingredients. I'm tempted to give it a 9.5, a 9 plus a little more. A bomb.
Mollica is a nice spot for an aperitivo with friends, with good local ingredients and a rustic-modern vibe, but the combos lack wow and the price-quality ratio is not great — the Vaccaro sandwich is the standout.

Casaro con Mortadella Piemontese, Stracciatella 100%, Melanzane a Filetti e Cipolla Caramellata
I start with this one. The service temperature is a bit disappointing — they passed it on the grill but I expected it warmer, with a thermal shock between hot outside and cold inside. The mortadella is maybe a bit too thick, but it gives a nice bite. The caramelized onion is there, it marries well. The bread is very light, the tomato is harmonious and sweet. Overall, it's a democratic, honest schiacciata. I approve it.
Erbivoro
This one looks a bit more tired, less appealing visually. It reminds me of a fried zucchini in scapece. The service temperature is better. But no particular aroma stands out, maybe the cheese. The Toma cheese is the protagonist. For a vegetarian it could be interesting, but I wouldn't recommend it for a first visit. The top of the bread has dried out a bit, become biscuit-like, while the bottom stayed soft. This one didn't excite me, to be honest.
Vaccaro
This one wins hands down. The difference is made by the mustard and honey — the fat, the sweet, the unctuousness, the soppressata. It's a really nice product. It's a bit sweaty, the counter might not be refrigerated enough. The gorgonzola is underneath, maybe a bit scarce, but good. I expected a more intense gorgonzola taste, but it's very easy. This is the most successful one, engaging. I'd recommend coming for an aperitivo with friends and trying this.
