This welcome bite is all about pumpkin, reducing waste to zero. We start from the center with a little salad of pumpkin and black truffle from Lessinia, then a dash made from the pumpkin skin charred over coals, a little meatball from the pulp with its seeds, and a pumpkin seed oil — all pumpkin, no oil. I start with the truffle one: delicate at first, then the truffle hits you and makes everything decisive. So good. The meatball is perfectly crunchy on the outside, super soft inside, with a fantastic hazelnut aftertaste — I want twenty of them. The smoked pumpkin dashi has an earthy, mushroomy, vegetal aftertaste. We finish with two crunchy leaves: one with rice flour, cocoa and chestnuts, the other with buckwheat and pumpkin seed. For October, even if it feels like July, we had to start with pumpkin, chestnuts and cocoa.

We start the tasting with a Chardonnay Purezza Anato 2021 from Flora Cantina, paired with our bread selection: a sourdough loaf with hay infusion and polenta on the center of the table, and on the left a pumpkin bun paired with black truffle and a salted butter, a French Demel. We complete it with an extra virgin olive oil from Garda, super limited edition — only 400 bottles. It smells like hay, it's super warm. I can't imagine what the guy from Antico Vinaio would say. This fantastic truffle butter melts into the schiacciata. Salted truffle butter, exceptional bread, stratospheric goodness. This oil is superb. Fantastic bitter notes, it pushes more on the bitter than the spicy, incredibly good.

These marinated anchovies swim in a blue sea made with pea flower water — we've used it at home a couple of times, pea flowers dye things blue. People who don't like anchovies probably ate bad ones, because fresh anchovies treated well are one of the best fish on the planet. Alessia was one of those who didn't eat anchovies, but after many trips to Sicily and Spain where we tasted quality anchovies, she converted too — she's in the blue fish club. And these anchovies would make you reconsider if you're one of those people.

We move to Mosser, Germany — a 2021 Pinot Noir in purity. This dish is a mosaic of tuna, amberjack, wild spinach and sesame dressing. What a joy that this dish came to me. The soy sauce, the sesame, the seaweed — everything takes us back to Japan, but with the wild spinach it Mediterraneanizes everything. Grandiose.
Crudo di Capasanta Affumicato al Legno di Ciliegio, Caviale di Bovolone, Rucola Selvatica ed Estratto di Pesca
We continue with raw scallop smoked over cherry wood, caviar from Bovolone — so we stay local — wild rocket from our valley, and peach extract. Also here we stay at Fenile, which is cool. Obviously there's the sweetness of the scallop, lightly smoked, which marries well with the fishy taste of the caviar — once again Italian caviar, and this is local caviar. The rocket gives a very light herbaceous, almost bitter note, but this peach sauce — called 'persego' in local dialect, as the good Mario Brega would say — this dish is a masterpiece.
