I started with the skinless pork sausage. It's nice lean meat, very, very tasty — you can feel all the spices. The fennel on top just improves the overall taste; it's falling apart and has a very mild taste coming from it, but for this sausage it's just fabulous.
Culurgiones Oliastrini
Next I tried the Culurgiones, the local dumplings stuffed with potato, mint and some Pecorino cheese, topped with walnuts and additional Pecorino. The stuffing is like mashed potato, and the mint really changes the taste — of course Pecorino is here to improve everything. This is another really great local food.
Mille Foglie Di Carasau
Last but not least is the Mille Foglie of Carasau — layer upon layer of this local bread stuffed with delicious vegetables and smoked chips cheese on top. It seems very simple, but that taste of fried pepper hits you right away, and then the aubergines, and then this very tasty bread, and of course the sheep's cheese on top. I expected it to be crunchy, but this bread is actually very, very soft to the touch — I'm pretty sure I can break it with my fork.
