Baccalà in Umido with Onions and Tomatoes

A classic Italian dish of salted cod stewed with onions, tomatoes, capers, olives, and herbs. Perfect for Christmas or any special occasion.

Ingredients

- 500 gTomato Sauce
- 1 pcsRed Onionlarge
- 1 pcsGarlicclove
- Dry White Winehalf glass
- Extra Virgin Olive Oilas needed
- 10 pcsCapersabout 10
- OlivesGaeta or Taggiasca olives
- Parsleychopped, to taste
- Oreganoa pinch
- Chili Pepperto taste
- Saltto taste
- Pepperto taste
- 1 pcsBay Leavesbay leaf
- 250 mlWaterhalf the volume of tomato sauce
- Porcini Secchi(optional) — optional, rehydrated
Method
- Remove any bones from the fish and cut it into pieces about three fingers wide.
- Finely chop the onion, garlic, and parsley.
- In a large pan, heat olive oil and brown the fish pieces on each side for about 2 minutes.
- Add the white wine and let the alcohol evaporate over high heat.
- Remove the fish and set aside.
- In the same pan, sauté the garlic, chili, and onion until softened.
- Season with salt and pepper.
- Once the onion is frying in its own liquid, add the capers.
- When the liquid has evaporated, reduce the heat and return the fish to the pan, placing it skin-side down on the onion bed.
- Add the tomato sauce, water (half the volume of the sauce), bay leaf, and olives.
- Adjust salt: if using baccalà, salt at the end; if using stoccafisso, salt now.
- Bring to a boil, then reduce the heat to low, cover, and cook for 45 minutes.
- Halfway through cooking, optionally add rehydrated dried porcini mushrooms.
- After 45 minutes, remove the lid and reduce the sauce if necessary.
- Turn off the heat, add oregano and parsley, and drizzle with raw olive oil.
- Cover and let rest for 10–15 minutes before serving.
