Delicious puff pastry boats filled with a tartare of smoked salmon, chives, and crème fraîche. Perfect as a festive appetizer or for an aperitif.

Method

  1. Cut the puff pastry using two round cutters of different sizes: one for the base and one for the borders.
  2. Bake in a static oven at 200°C for 20 minutes.
  3. Meanwhile, cut the smoked salmon fillet into small cubes.
  4. Season the salmon cubes with chopped chives, crème fraîche (or sour cream), and lemon zest to make the tartare.
  5. Fill the baked puff pastry boats with the salmon tartare.
  6. Optionally, use leftover trimmings to make small bites: fill with half an anchovy fillet, fold into semicircles, and bake until crispy.
