Homemade Pretzels

A classic German soft pretzel, with a distinctive amber color and knotted shape, typically salted and perfect with beer.

- In a mixing bowl, combine flour, dry yeast, and softened butter. Add water and salt, then knead until the dough is smooth and elastic, about 6-7 minutes.
- Transfer the dough to a lightly floured work surface, shape into a log, and divide into 5 equal parts.
- Shape each piece into a long rope, making the ends slightly thinner.
- Form the pretzel shape by creating a loop, crossing the ends, and folding them over the edge.
- Place the shaped pretzels on a floured tray, cover, and let rest at room temperature for 30 minutes, then refrigerate for 1 hour.
- Bring a pot of water to a boil and add baking soda. Boil each pretzel for 30-40 seconds.
- Transfer the boiled pretzels to a baking sheet lined with parchment paper. Using a sharp blade, score the top of each pretzel.
- Sprinkle the pretzels with salt flakes.
- Bake in a preheated static oven at 220°C (430°F) for 20 minutes.
