Method
- Cut the durum wheat bread into thick slices and toast them on a grill until crispy on the outside but soft inside.
- Prepare the puntarelle: season with olive oil, salt, pepper, and orange juice.
- Make the whipped butter: start by mashing room-temperature butter with a fork, then whip with electric beaters. When creamy, gradually add sparkling water little by little while continuing to whip until light, airy, and creamy.
- Spread the whipped butter onto the still-warm toasted bread.
- Place the smoked salmon on top.
- Add the seasoned puntarelle and olives.
- Garnish with pomegranate seeds and orange slices.
