Crispy zucchini and feta fritters served with a creamy yogurt sauce with black olives and herbs. A perfect appetizer for a Greek-themed dinner.

Method
- Clean the zucchini and grate them with a large-hole grater. Place them in a clean cloth and salt them. Let them rest for 15 minutes then squeeze out the water.
- Chop the mint and parsley.
- In a bowl, combine the squeezed zucchini, crumbled feta, chopped onion, minced garlic, parsley, mint, and eggs. Season with salt and pepper and mix.
- Add the flour and mix well.
- Prepare the sauce: yogurt, pitted and chopped black olives, chives, lemon juice, orange zest (optional), honey, oil, salt, and pepper. Mix.
- Fry the fritters in hot peanut oil for a few seconds on each side until golden.
- Serve the fritters with the sauce.
