- Mash the boiled potatoes. Season with salt and pepper. Add one egg and mix. Gradually add flour and knead until a smooth dough forms. Roll into gnocchi shapes.
- Boil the gnocchi in salted water until they float to the surface. Drain and set aside.
- Slice the zucchini thinly.
- In a pan, heat a drizzle of olive oil with a clove of garlic. Add the sliced zucchini, mint leaves, and basil leaves. Cook until tender. Season with salt. Blend into a smooth cream.
- Return the cream to the pan. Add the cooked gnocchi and toss to coat.
- Grill the mackerel fillets on both sides until cooked through.
- Serve the gnocchi with the grilled mackerel fillets, a drizzle of olive oil, and a generous grating of pecorino cheese.
