Paccheri alla Ghiottona

A rich and flavorful pasta dish from Campania, featuring separately cooked eggplant, cherry tomatoes, and swordfish to preserve their distinct flavors and textures, then combined in a savory sauce.

Ingredients
11 items- 250 gPaccheriMezzi paccheri or full-size paccheri
- 200 gCherry TomatoesDatterini or ciliegino tomatoes
- 200 gSwordfish1 thick slice; can substitute with fresh tuna
- 1 pcsEggplantMedium-sized
- 1 pcsRed OnionMedium-sized
- 1 pcsGarlic1 clove
- CapersTo taste, preferably salt-packed, rinsed
- BasilFresh leaves, for garnish
- SaltTo taste
- Black PepperTo taste
- Extra Virgin Olive OilExtra virgin olive oil, for cooking and drizzling
Method
- Trim the eggplant, cut into 1 cm slices, then strips, then cubes.
- Heat olive oil in a pan, add the eggplant cubes, season with salt, and cook on high heat until golden and a crust forms (Maillard reaction). Set aside.
- Roughly chop the red onion. Finely chop the garlic (remove the germ if present).
- Cut the cherry tomatoes in half.
- In the same pan, add the chopped onion and garlic with a little olive oil (add oil after the vegetables to prevent burning). Sauté until the onion becomes translucent.
- Add the cherry tomatoes, salt, and pepper. Cook on high heat for 3–4 minutes until slightly dehydrated.
- Add the tomato mixture to the reserved eggplant.
- Place the whole swordfish slice in the pan with a drizzle of olive oil. Cook on high heat for 40–50 seconds per side to develop a crust (the inside remains raw/pink).
- Return the vegetables to the pan with the fish, reduce the heat. Remove the fish, peel off the skin, then cut into strips and cubes.
- Add the chopped fish back to the pan, add capers, cover, and let simmer on very low heat.
- Deglaze the pan with a ladle of hot water (or pasta water if needed). Cover and continue simmering on low heat.
- Meanwhile, cook the paccheri in salted boiling water until al dente.
- When the pasta is ready, increase the heat under the sauce, drain the pasta and add it directly to the pan. Toss well.
- Add fresh basil torn by hand and a drizzle of extra virgin olive oil. Serve immediately.
