Traditional Sicilian pasta from Messina with swordfish, eggplant, cherry tomatoes, and almonds, caramelized to perfection.

Ingredients
19 items- 400 gSwordfishCut into cubes
- 1 pcsEggplantCut into cubes
- Datterini Tomatoes (Sicilian Cherry Tomatoes)With a small incision
- 1/2 pcsOnionFinely chopped
- 1 pcsGarlic1 clove for the sauce, 1 clove for the swordfish
- 2 pcsDried Chili PepperTwo dried chili peppers; fresh preferred
- Extra Virgin Olive OilAbundant for sautéing
- SaltTo taste
- PepperA pinch
- Muscovado or Cane SugarA generous handful for caramelizing
- Anchovies (Alici)A few, preferably Sicilian
- BasilA few leaves, torn
- ParsleyA sprig for the swordfish and leaves for garnish
- Dry White WineA splash for deglazing
- 1 pcsLemonZest only
- 1 pcsOrangeZest only
- 500 gPasta (Mezzi Rigatoni or Similar)Any short pasta works
- AlmondsA handful, toasted and roughly chopped
- Ricotta Salata (optional)(optional) — Grated on top before serving
Method
- Remove the skin from the swordfish and cut it into cubes.
- Cut the eggplant into cubes.
- Make a small incision in each cherry tomato (do not cut in half).
- Finely chop half an onion.
- In a pan, heat abundant extra virgin olive oil with a clove of garlic and two chili peppers. Sauté until fragrant.
- Add the cherry tomatoes and eggplant to the pan. Cook on high heat with salt, pepper, and a handful of sugar for about 5 minutes to caramelize.
- Add a few anchovies and torn basil leaves. Stir well.
- Taste the sauce and set it aside.
- In the same pan (or another), add a little oil, a garlic clove, and a sprig of parsley. Add the swordfish cubes and sear on high heat for 3–4 minutes.
- Remove the garlic clove and parsley sprig.
- Deglaze with white wine and let the alcohol evaporate for about 1 minute.
- Pour the tomato–eggplant sauce into the pan with the swordfish and mix.
- Grate the zest of one lemon and one orange, then add to the sauce.
- Meanwhile, bring salted water to a boil and cook 500 g of pasta (e.g., mezzi rigatoni).
- While the pasta cooks, toast and roughly chop a handful of almonds.
- When the pasta is 2 minutes from al dente, transfer it to the sauce and finish cooking, stirring well.
- Serve the pasta with crushed almonds and fresh parsley leaves. Optionally, grate some ricotta salata on top.
