Pasta alla Montecarlo

A rich and creamy pasta dish from the 80s, combining a meat ragu with pesto and cream. Short pasta like rigatoni is tossed in a savoury sauce made from ground pork and veal, tomato passata, red wine, pesto alla genovese, and cream. A nostalgic comfort food.

Ingredients

- 250 gCarne macinata di maialeground pork
- 250 gCarne macinata di vitelloground veal

- Celeryfinely chopped, to taste
- Carrotfinely chopped, to taste
- Onionfinely chopped, to taste
- Red Winea splash, for deglazing
- Tomato Passataenough to coat the meat
- Watera little, to rinse the passata jar
- Pesto alla Genovese2-3 tablespoons
- Cooking Creamto taste, about 100-150 ml
- 400 gRigatoni (o altra pasta corta)or other short pasta
- Grana Padano (o Parmigiano Reggiano)(optional) — for serving, grated
Method
- Heat a drizzle of olive oil in a large pan over medium heat.
- Add the ground pork and ground veal, season with a pinch of salt, and sauté for about 5 minutes, breaking up the meat.
- Add finely chopped celery, carrot, and onion. Sauté for another 2 minutes until softened.
- Pour in a splash of red wine, increase the heat, and let it evaporate for 2 minutes.
- Add the tomato passata. Rinse the jar with a little water and add that as well. Stir everything together.
- Cover the pan with a lid, lower the heat slightly, and cook for 45 minutes, stirring occasionally.
- After 45 minutes, the sauce should be thick and the meat tender. Turn off the heat.
- Add 2-3 tablespoons of pesto alla genovese and mix well.
- Add the cream (about 100-150 ml or to desired richness) and stir. Cook over low heat for 2-3 minutes to combine.
- Meanwhile, bring a large pot of salted water to a boil and cook the rigatoni (or other short pasta) until al dente. Drain, reserving a little pasta water.
- Add the drained pasta to the sauce and toss well, adding a splash of pasta water if needed to loosen.
- Serve immediately, topped with a light grating of grana Padano or Parmesan.
