A fun and festive pasta dish shaped like little candies, filled with a savoury mixture of pumpkin, sausage, and Parmesan, served in a creamy Gorgonzola sauce and topped with crushed walnuts.

Ingredients
8 items- Sfoglie di PastaPre-made pasta sheets, about 10-12 cm wide. See description for how to make them.

- Whipping CreamWhipping cream
- Sweet GorgonzolaSweet Gorgonzola (milder, aged ~50 days)
- WalnutsWalnuts, lightly crushed

Method
- Prepare the filling: mix together pumpkin, pre-cooked sausage, and Parmesan cheese until smooth.
- Take pre-made pasta sheets about 10-12 cm wide.
- Place a teaspoon of filling on the edge of the pasta sheet. Fold the pasta over once or twice to cover the filling.
- Use a brush to apply a little water on the edge to seal. Cut the pasta to create a small pocket. Press with your finger to remove air, then pinch the sides to form a candy shape.
- Repeat to make about 4-5 candies per person.
- Bring a pot of generously salted water to a boil for the pasta.
- Gently heat whipping cream in a separate pan. Add sweet Gorgonzola and stir with a wooden spoon until melted. Do not add extra salt (the Gorgonzola is salty enough).
- Lightly crush walnuts by tapping them with a rolling pin or similar tool.
- Drop the pasta candies into the boiling water. Cook for 1-2 minutes, until they float to the surface. Remove with a spider strainer.
- On a serving plate, spoon a generous layer of the cream sauce as a base.
- Arrange the pasta candies on the sauce. Drizzle with more cream sauce.
- Sprinkle with crushed walnuts as a final garnish.
- Serve immediately with a spoon to capture both the candy and the sauce.
