Pasta e Patate alla Napoletana is a traditional Neapolitan recipe from the cucina povera (poor cuisine), combining pasta and potatoes in a hearty soup enriched with lard, tomato paste, and Parmesan rind. This version uses a mix of pasta shapes and is finished with a drizzle of olive oil.

Method
- Peel the potatoes and cut them into rough 2 cm cubes.
- Cut the lard into small cubes.
- In a pan, heat a drizzle of olive oil and brown the lard cubes.
- Add finely chopped celery, carrot and onion, and sauté until fragrant.
- Add the potato cubes and sauté briefly, being careful not to burn them.
- Add a whole sprig of rosemary.
- Add the rinsed and scraped Parmesan rind.
- Add the tomato paste dissolved in a little hot water.
- Season with salt and pepper.
- Cover and cook over low heat for about 30 minutes.
- After 30 minutes, remove the rosemary sprig and mash some of the potatoes in the pot using a wooden spoon or potato masher. Stir well.
- Add enough hot water to achieve a soup-like consistency.
- Add the mixed pasta and cook until al dente.
- Serve with a drizzle of raw olive oil.
