A delicious chicken breast dish with a glossy grapefruit and soy sauce glaze, served with caramelized crispy onions. A modern twist on classic duck breast, prepared step by step.

Method
- Preheat the oven for the onions. Place small onions in a baking dish with olive oil, salt, and sugar. Roast for about 10 minutes or until tender and caramelized.
- Take a chicken breast with skin. Season lightly with salt. Heat a pan with a little oil and place the chicken breast skin-side down. Cook on medium heat until the skin is golden and crispy.
- Flip the chicken breast briefly on the other side, then transfer to the oven preheated at 180°C (350°F) and cook for about 6 minutes.
- In the same pan, add the juice of one grapefruit, one tablespoon of honey, two tablespoons of soy sauce, a pinch of salt, and a few sage leaves. Stir and let the sauce simmer until it thickens and becomes glossy.
- Return the roasted chicken breast to the pan and coat it well with the glaze. Cook for another minute until the glaze sticks.
- Arrange the chicken on a plate. Place the caramelized onions on the side. Garnish with grapefruit segments and crispy onion pieces. Serve immediately.
