Traditional Italian meatloaf filled with provola cheese and cooked ham, baked until golden. Chef Roberto Di Pinto shows his home-style version.

13 items- Old BreadStale bread, crust removed
- Ground BeefMinced beef, half of the total meat mix
- Ground PorkMinced pork, half of the total meat mix
- 4 pcsEgg
- Parmigiano ReggianoGrated Parmesan cheese
- ParsleyChopped parsley
- GarlicChopped garlic
- SaltSalt to taste
- PepperPepper to taste
- Olive OilFor greasing the baking paper
- Grated BreadBreadcrumbs for coating
- ProvolaFresh provola cheese, well-drained
- Cooked HamCooked ham, sliced
Method
- Take stale bread, remove the crust, and soak it in water (do not use milk).
- Squeeze the bread well and set aside.
- In a large bowl, mix equal parts minced beef and pork.
- Add 4 eggs, grated Parmesan cheese, chopped parsley and garlic, salt, and pepper.
- Add the squeezed bread and knead everything together by hand until well combined.
- Spread a little oil on a sheet of baking paper, then place the meat mixture on top and flatten it evenly.
- Sprinkle breadcrumbs over the flattened mixture.
- Lay fresh provola cheese (well-drained to avoid excess water) and slices of cooked ham over the meat.
- Using the baking paper to help, roll the meat tightly into a log, pressing the sides to seal.
- Wrap the log in the baking paper and place it on a baking tray.
- Bake at 180°C for 15 minutes, then open the paper slightly to let the surface brown and continue baking until golden.
- Remove from the oven, let it rest briefly, then slice and serve.
