Whole Wheat Quadrotto with Squid and Crusco Pepper

After a nice trip to Campobasso at Pasta La Molisana, we dedicated ourselves to what we love most: cooking. For the first recipe we chose to make a quick but very special dish, using a unique pasta shape, the Whole Wheat Quadrotti from La Molisana, and combining sea and land ingredients. The concept is very 80s, but the taste is always current, even timeless!

Method

  1. Clean the squid: remove the central bone, cut the body into strips and the tentacles in half.
  2. In a pan, heat a drizzle of olive oil with 2 cloves of garlic and a tip of chili pepper (seeds removed).
  3. Sear the squid quickly, deglaze with a splash of white wine, and cook until the liquid evaporates. Remove the squid and set aside.
  4. Add a sprig of rosemary and the chickpeas to the pan. Sauté for a minute.
  5. Cook the whole wheat quadrotto pasta in boiling salted water for half the recommended time.
  6. Add a ladle of pasta water to the pan with the chickpeas. Remove the garlic, chili, and rosemary. Use a spoon to mash some of the chickpeas to create a creamy sauce.
  7. Drain the pasta (still al dente) and add it to the pan. Continue cooking, adding more pasta water if needed.
  8. Season with a pinch of salt and pepper.
  9. Return the squid to the pan and toss everything together.
  10. Finish with a drizzle of olive oil and grated lemon zest.
  11. Serve topped with crumbled crusco peppers.
