Green Crepe Rolls

Method

1. In a bowl, combine the eggs, a pinch of salt, a drizzle of oil, and the squeezed spinach. Blend until smooth.
2. Add the flour and mix until the batter is smooth.
3. Pour a ladleful of batter into a hot oiled pan and cook for 3 minutes on each side.
4. Spread the cream cheese over the crepe.
5. Add slices of smoked salmon.
6. Roll up the crepe, folding in the edges, to form a tight roll.
