A quick and delicious puff pastry roll filled with pan-fried cherry tomatoes and creamy spreadable cheese, perfect for an aperitivo. The tomatoes are caramelized with a sprinkle of brown sugar for extra flavor.

Ingredients

- TomatoesCherry or small tomatoes, as needed
- 2 pcsGarlic2 cloves, peeled

- Spreadable CheeseCrescenza, ricotta, or other spreadable cheese, as needed
- Thyme(optional) — Fresh or dried, to taste
- Basil(optional) — Fresh leaves, for garnish
- Cane SugarFor sprinkling, about 1 tablespoon
Method
- Heat a drizzle of olive oil in a pan and add two cloves of garlic.
- Add the tomatoes and a pinch of salt, then sauté until softened and slightly caramelized.
- Remove the garlic cloves from the pan.
- Spread a layer of spreadable cheese (such as crescenza or ricotta) onto a sheet of puff pastry, leaving a border.
- Spread the sautéed tomatoes evenly over the cheese.
- Carefully roll the puff pastry into a log, using the parchment paper to help.
- Place the roll on a baking tray and sprinkle with brown sugar.
- Bake in a preheated oven at 180°C (350°F) for 10–12 minutes, until golden and puffed.
- Optionally, garnish with fresh basil or thyme before serving.
