Method

  1. Clean the puntarelle by removing the outer fibrous part and cut them very finely.
  2. Create an emulsion with olive oil, anchovy fillets in olive oil, half a garlic clove, a pinch of salt, and a dash of vinegar. Blend until smooth.
  3. In a pan, melt a generous amount of butter and sauté half a garlic clove and some thyme.
  4. Once the butter is melted, add the spaghetti directly into the pan and finish cooking, adding pasta water if needed.
  5. Plate the pasta and top with the fresh puntarelle salad.
  6. Finish with anchovy fillets in olive oil. Serve immediately.
