Pressure cooker beef stew: all the comfort of a great classic, but with faster cooking times. Tender and juicy meat, perfect to serve with potatoes, polenta, or creamy mashed potatoes.

Method
- Cut the veal into bite-sized pieces.
- Heat oil in the pressure cooker and add the meat. Season with salt and pepper.
- Brown the meat over medium-high heat for about 6-7 minutes, stirring occasionally.
- Add the chopped celery, carrots, and onion. Stir well.
- Deglaze with red wine and let the alcohol evaporate.
- Add the herb bundle (rosemary, bay leaf, sage), tomato paste, and then water. Stir.
- Close the pressure cooker. Once the valve whistles, cook for 45 minutes.
- Release the steam, then cook for another 15 minutes over medium-low heat.
- Open the pressure cooker, remove the herb bundle, and serve.
