A quick and delicious tarte tatin made with apples, Tropea onions, and balsamic vinegar, baked with puff pastry and served with fresh thyme and robiola cheese.

Ingredients

- Butterfor the pan and in flakes
- Fresh Thyme(optional) — for garnish
- Robiola(optional) — for serving, seasoned with olive oil, salt, and pepper

Method
- Slice the apples and Tropea onions into rounds.
- In an ovenproof skillet or frying pan, add butter, balsamic vinegar, and brown sugar. Heat over medium flame to caramelize.
- Arrange the sliced onions and apples in the pan in a pattern. Do not stir.
- Cook on medium heat without stirring until caramelized.
- Meanwhile, preheat the oven to 180°C (static).
- Roll out the puff pastry.
- Once the mixture is caramelized, turn off the heat. Add a pinch of salt. Cover with the puff pastry, tucking the edges into the pan to seal.
- Bake at 180°C for about 30 minutes.
- Immediately after removing from the oven, invert the tarte tatin onto a plate.
- Garnish with fresh thyme and quenelles of robiola cheese seasoned with olive oil, salt, and pepper.
