A healthy and delicious Italian pasta dish packed with greens – kale, spinach, and broccoli – blended into a creamy sauce with Parmesan. Perfect for the whole family, this vegetarian recipe is quick to make and full of protein and fiber.

Ingredients
7 items- 100 gCavolo Nero
- 80 gSpinach
- 200 gBroccoli
- 450 mlCooking CreamAdd a little water if the mixture is too thick.
- 150 gParmigiano Reggiano
- 500 gPasta Penne di FarroSpelt pasta; use another short pasta if unavailable.
- 2 tbspSaltFor the pasta cooking water.
Method
- Fill a large pot with 3-4 liters of water and bring to a boil. Add the kale, spinach, and broccoli. Boil until the greens are tender and have lost their bitterness.
- Once the water is boiling and the greens are soft, add the spelt pasta and 2 tablespoons of salt. Cook according to pasta package directions, but slightly undercook as it will finish cooking in the sauce.
- Meanwhile, transfer the cooked greens to a blender or food processor. Add the cooking cream and a little water if needed (to adjust consistency). Blend until smooth.
- Pour the green puree into a large pan and simmer for a couple of minutes. Gradually add the grated Parmesan cheese, stirring until completely melted and incorporated.
- (Optional) For a spicy version, sauté thinly sliced garlic and chili flakes in a generous amount of olive oil in a separate pan. Then combine with the sauce.
- Drain the pasta (rinse if desired) and add it to the pan with the green sauce. Toss well over low heat until the pasta is coated and heated through.
- Serve immediately.
