Method
- Cut the tofu in half.
- Prepare the batter with chickpea flour and water, mixing with a fork until the right consistency.
- Coat the tofu first in the batter, then in panko.
- Fry the tofu one piece at a time until golden.
- Drain on paper towel and salt.
- Prepare the sauce: mix natural yogurt, lemon juice, and mustard.
- Cut the green tomatoes into wedges.
- Finely chop the herbs (chives and fennel leaves).
- Add the herbs to the tomatoes and season with oil, salt, and pepper. Mix well.
- Plate: spread the sauce on the center, place the tofu on top, and add the tomato salad on the tofu.
